Welcome the new member of our "Bread Family"
The new bread is definitely something for bread lovers, who set a great value upon good nutrition. The bread includes 7 different kind of seeds and grains.
Rye flour and freshly ground whole grains, whole wheat grains (freshly ground), spelt flour, sesame and flax seeds, pumpkin and sunflower seeds. It contains home made breadspices with caraway, anise and fennel.
Needless to say that only my new "fancy" kitchen gadget (the mill), made it possible to get the freshly ground rye and wheat.

the right equipment
Yesterday I got a seed grinder in Spanish Lookout. (By the way... this thing looks like from the Middle Ages).
Now I can grind my rye and wheat grains and use the shredded grains for a very healthy bread.

French Baguette

I don't need much more on a Sunday Morning.
A warm baguette and a cup of coffee. I would certainnly prefer a Cappuccino or a Latte Macchiato... you see, there's still room for improvement. ;)

Veggie Bread
This is a real healthy start in the day. It's a sappy bread with a totally different taste you expect from a bread.
I was a little doubtful if vegetables and bread could match. But after the first slice, I can approve that this is really delicous.
It fits perfect to cheese (whenever you can get decent one in Belize... please let me know).

Italian Style
This evening we had Mozarella Cheese - I got the tomatoes and fresh basil here at the market.
To complete this Italian dish, I baked a crispy ciabatta bread.

Mixed Nut Bread

with hazelnuts, sunflower and pumpkin seeds.
This healthy bread is vitamin-packed and fiber-rich.
Hazelnuts are rich in protein and unsaturated fat. Moreover, they contain significant amounts of thiamine and vitamin B6, as well as smaller amounts of other B vitamins. They are rich in vitamin E.
Pumpkin seeds are also good sources of protein, and the essential minerals iron as well as zinc, and magnesium.
Sunflower seeds are also an excellent source of dietary fiber, some amino acids, Vitamin E, B Vitamins. Additionally, they are rich in cholesterol-lowering phytosterols.
Together with the rye flour you can be sure that this bread is perfect for a healthy start in the day.

Dark Oat Bread

People around here like to eat bread which is a little sweeter.
So I created the Dark Oat Bread with oat flakes, whole wheat flour and my secret bread-spice-mix.

No Knead Bread

If you bake a lot of bread and you're looking always for new recipes... it's only a question of time until you'll find recipes for "No-Knead-Bread".
Most of them use only all-purpose flour but I found one recipe with different varieties of flour. I used (different as listed) rye, spelt and whole wheat flour. I added pumpkin and sunflower seeds... and pine nuts I brought from Germany. My dough was not as fluid as it should be, but it was gluing like hell at my hands.
The taste is nuttily, the crumbs are fine and the crust is crispy.
But to be honest - I'm more the typ "I-love-to-knead-bread"
