Nut-Choo's

The word "choo" is Kreol and means "to chew"... and this is what you have to do with this pastry.

I put in 400 gram of nuts. It's a mixture of pecan nuts, walnuts and almonds. Instead of apricot jam I made them with papaya-mango-jam.

The combination of the tartish fruits with the nuts and the bittersweet chocolate is delicious.

Nut Bun

Yesterday I was really successful in Belize City.
I got lots of little delicacies... including a small package of hazelnuts.

The price for it was off the roof. I had to pay almost $9.00 for 2 1/2 cups (€ 6,10 for 280 gram).

So I used them for a special, delicous, scrumptious, yummy... nut bun with a touch of cinnamon.

Cereal Munchies

Today I experimented with the small number of ingredients I can get here.I baked some cookies with cereals.

To be honest - I'm not sure if I will bake them again because the consistency of the baked corn flakes is a little tough.

Mixed Nut Bread

with hazelnuts, sunflower and pumpkin seeds.

This healthy bread is vitamin-packed and fiber-rich.

Hazelnuts are rich in protein and unsaturated fat. Moreover, they contain significant amounts of thiamine and vitamin B6, as well as smaller amounts of other B vitamins. They are rich in vitamin E.

Pumpkin seeds are also good sources of protein, and the essential minerals iron as well as zinc, and magnesium.

Sunflower seeds are also an excellent source of dietary fiber, some amino acids, Vitamin E, B Vitamins. Additionally, they are rich in cholesterol-lowering phytosterols.

Together with the rye flour you can be sure that this bread is perfect for a healthy start in the day.

No Knead Bread

If you bake a lot of bread and you're looking always for new recipes... it's only a question of time until you'll find recipes for "No-Knead-Bread".

Most of them use only all-purpose flour but I found one recipe with different varieties of flour. I used (different as listed) rye, spelt and whole wheat flour. I added pumpkin and sunflower seeds... and pine nuts I brought from Germany. My dough was not as fluid as it should be, but it was gluing like hell at my hands.

The taste is nuttily, the crumbs are fine and the crust is crispy.

But to be honest - I'm more the typ "I-love-to-knead-bread"
