Papaya - the natural meat tenderizer
The first trees we planted on our property were papaya trees.
The papaya fruit is rich in an enzyme called papain which is useful in tenderizing meat. It's perfect when you wrap the rare meat in freshly cut leaves. If you can't get them, you can also cut the fruit into little stripes and use them instead of the leaf.
This evening I made pork tenderloin wrapped with bacon. I served it with basmati rice and fresh mushrooms.
