Since I know (I hope that I don't confuse it) that she likes the cherry cake - I baked one, especially for her.

They have a huge variety of different designs and the quality is just awesome.
The cakes don't stick and they are so easy to clean.



I mixed the mangoes with apple and sliced almonds and added some cinnamon and lime.

To find them somewhere is really a big challange.
I was so glad when I got some little plums at FTC. One portion I used for the mango jam and the other portion was just enough to bake a plum-pie with streusel (I was surprised to learn that this word is used in the English language as well).


This is a recipe I got from my mother.
I love this cake because it's very sappy.
Unfortunately I could not get cherry brandy and morello cherries. But I tried a piece.... and I think I'll have another one... or two... or three ;)
Today I baked a Mango Meringue Pie. It's incredible how much better the mangos in Belize taste.
I knew the taste of mangos I bought in Germany - but you can't compare this to the fruits you can get here.


A lot of the ingredients I could not get here so I had to be creative and experiment with the stuff I could get here.So... instead of quark I mixed Ricotta with Mascarpone (I was glad that I got this in Belize City).
It was also not possible to get semolina here - so I replaced it with white corn flour and instead of apricot jam I used pinaple jam.

I know, it's a little bit trite, but for Easter I had to bake a carrot cake.
I decorated the cake with self-made marzipan carrots. (Can you imagine, how difficult it is to handle marzipan when it has almost 100 °F ?)
Usually I use a recipy from an American cookbook. Unfortunately it's still hidden in the container and so I used a different recipy. My original carrot cake is a little more fluffy.

I saw the recipe last week at another food blog. The cake looked so sappy and delicous that I decided to bake this cake for our Monday Club.
Unfortunately the writer of the blog used American measurements as well as German and I mixed up the amount of pecan nuts.
Instead of a cup (240 ml) I took 240 gram - almost double the amount.
But this is no problem because I love the taste of these nuts.

This is something typical German.
A light biscuit cake base with fruits on top.
Because my original baking pan is still hidden somewhere in the depth of our container, I used a springform pan and doubled the amount of dough. After baking the cake base I scooped it out in the middle and put the fruits on top.

Last time when I was in Belize City, I got hold of sliced almonds. I had to pay 12 BZ (6$ or 4,50 €) for 170 g - almost a fortune... but sometimes it's worth it.
For the Rose-Apple Cake I needed 80 grams - so I can bake another one... or try something different.
